INGREDIENTS:
- 1 egg
- 1 egg white
- 1/2 cup almond flour
- 2 tbsp coconut milk
- 1 medjool date diced into small pieces
- 2 tbsp shredded coconut
- 1 tbsp honey
- 1/4 cup shredded carrots
- 1 tsp cinnamon powder
- 2 tbsp sultanas
- 1/4 tsp baking powder
METHOD:
- Heat oven to 200 C
- In a bowl mix the egg and the egg white together and whisk
- Add all the other ingredients into the bowl and mix
- Press mixture into muffin tray
- Place into oven for 25 mins. Poke a skewer into each until it comes out clean – if not return to oven
- Place on a wire rack and sprinkle some shredded coconut over the top
- Leave for 10 mins to cool and then serve
