Coconut Pancakes

  • 3 eggs
  • 1 mashed banana
  • ¼ cup coconut flour
  • ½ cup coconut milk
  • Coconut oil
  1. Crack the eggs in a bowl and mix
  2. Add the mashed banana, coconut flour and coconut milk and mix together
  3. Put bowl in a fridge for 20 minutes, to allow the coconut flour to thicken and absorb the liquid
  4. Heat a frying pan over a medium heat and add the coconut oil
  5. When the pan is hot add 2 spoonfuls of mixture from your bowl, which will make 1 pancake.
  6. Cook until firm and flip to cook the other side until golden brown.
  7. Repeat process until all of the mixture in the bowl is used.
  8. If desired serve with honey and raspberries.
