INGREDIENTS:
- 2 skinless chicken breasts (butterflied)
- 1/2 cup full fat coconut milk
- 1 lime (zest + juice)
- 1/4 tsp paprika
- bay leaf
- 1 tsp coriander powder
- 1/4 tsp pepper
- 1/4 tsp salt
- 2 tbsp honey
- Fresh coriander leaves, chopped
- 1 tbsp coconut oil
METHOD:
Marinade:
In a large bowl combine the 1/2 cup cocnut milk, lime juice & lime zest, melted honey, salt, pepper, paprika, bay leaves powder, coriander powder.
Stir all together. Add the chicken to the bowl , making sure it is covered all over by the marinade. Leave in the bowl for 45 mins (keep at room temperature)
Cooking:
- Put a large frying pan over a medium heat. Add the coconut oil and when melted make sure it cover the surface and then add the chicken.
- Cook the chicken 6 minutes each side. Remove from pan and place on a separate dish. Check that chicken is cooked through.
- Pour the remaining marinade from the bowl into the large pan and heat until simmering. Then add the chicken back and cook for 4 minutes each side.
- Put the chicken onto a plate and pour the liquid in the pan on tip of it.Sprinkle with coriander leaves and serves.
