INGREDIENTS:
- 4 large eggs
- Pinch of salt & pepper
- Knob of butter
METHOD:
- Whisks the eggs together in a bowl
- Add the butter into a pot over a medium heat and wait for it to melt.
- When the butter starts to bubble add in the eggs. Wait 20 seconds
- As the egg starts to set at the bottom of the pot, with a spatula gently push down into the pan from the edges and drag the mixture into the centre. You will start to get some egg curdles. Slowly continue in a clockwise manner, until the whole mixture has curdled together.
- Remove from heat, drag all the curdled egg to one side of the pot (the heat of the pot continues to cook the eggs) and leave for 20 seconds.
- Serve on a plate and sprinkle with salt & pepper.
